Proyecto Paladar, a cultural diplomacy experiment, united U.S. and Cuban citizens through gastronomy at the 11th Havana Biennial in 2012. Craig Shillitto orchestrated a culinary exchange where U.S. chefs collaborated with Cuban paladar chefs to craft innovative meals over ten days. Despite logistical hurdles, including scarce

resources and bureaucratic challenges, a pop-up restaurant and art project emerged from five shipping containers. Hosting over 800 patrons, the project fostered cultural exchange and dialogue, embodying the Biennial's theme of "Artistic Practice and Social Imageries" while bridging divides through shared culinary experiences.
